Pastificio Di Martino,Italy’s best-selling pasta maker, and creator of La Devozione, a multifaceted dining experience consisting of The Oval and A Tavola restaurants located at Chelsea Market,will be participating in the Plant Based World Expo, September 8th & September 9th, at the Javits Center.
To commemorate the occasion, La Devozione’s Executive Chef Alessio Rossetti has created vegetarian pasta menus that will be served at both The Oval and A Tavola restaurants.
A Tavola’s menu will be offered from September 5th through September 11th during lunch and dinner. Highlights includes:
- Mista Corta con Fagioli, cannellini beans, parsley
- Lumachine e Lenticchie, lentils, chili pepper
- Fresine Spezzate e Ceci, chickpeas, parsley
The Oval’s menu will be replacing it’s lunch a la carte menu on September 8th and September 9th , menu highlights include:
- Mille Righe, roasted red pepper, garlic, extra virgin oil
- Elica Gigante, red beet ragù, tomato, extra virgin oil
- Pacchero Calabria, with a vegetarian twist consisting of yellow tomato, fresh basil, roasted eggplant, and basil oil
- Linguina Marco Polo, linguine cooked in oolong tea served with garlic purée in a parsley foam topped with black truffle caviale
La Devozione, Chelsea Market, is the latest opening of Giuseppe Di Martino, third-generation owner of Pastificio Di Martino. The multi-faceted space was designed as a tribute to pasta and includes a retail shop featuring more than 120 of DiMartino’s pasta shapes, two restaurants, Italian cocktail bar and a counter for pasta to go. The goal of La Devozione is to introduce the New York audience to Giuseppe’s renowned dry pasta and Neapolitan culture, while allowing guests to enjoy the different shapes of pasta with their ideal ingredient pairings.
The space, designed by Marcello Panza, founder of Studio Minimo in Italy, is meant to evoke both the traditional and avant garde approaches to Neapolitan cuisine that Giuseppe and his Executive Chef Alessio Rossetti, exploit in the dishes they serve at the casual ‘A Tavola’ and in the fine dining tasting menu of ‘The Oval.’
Dubbed “the devotion” by Giuseppe and late Gambero Rosso founder and food critic Stefano Bonilli, ‘La Devozione’ is the restaurant’s namesake dish of spaghetti and tomatoes. The two traveled together throughout Italy in search of the perfect execution of Spaghetti al Pomodoro before finding the recipe and technique of Michelin starred chef Peppe Guida.
A Tavola is the casual restaurant in La Devozione where guests are invited to experience a wide array of Di Martino’s pasta shapes. Each shape is paired with seasonal, local ingredients intended to showcase the pastas’ strength and flavor.
The menu, developed by Giuseppe and Chef Alessio Rossetti (Hotel Grand Hotel Fasano in Gardone Riviera, Tony May’s SD26, Black Barn) is broken up between starters, seasonal pasta, the Untouchables and dessert.
Highlights of the starter section include the Lollipop Di Macaroni, which is macaroni with besciamella, yellow and white cheddar, Parmigiano Reggiano and nutmeg. These ingredients are formed into a bite-sized sphere, dredged and deep fried then served over hazelnut truffle mornay sauce with a popsicle stick for the presentation; Frittatina di Pasta and Trottole Alla Caprese, DOP Campania buffalo mozzarella, bull’s hart tomatoes, and basil.
The menu’s seasonal pasta is headlined by their heart, Gemelli, a double twisted pasta shape meets Massimo’s Pesto, inspired by Chef Massimo Bottura, owner of three-Michelin-starred Osteria Francescana. This nut-free pesto is made with mint, basil, Parmigiano and breadcrumbs, a tradition remade for sustainability and the chefs no waste approach. A percentage of proceeds of each dish will support Chef Bottura Food for Soul and the New York based project Refettorio Harlem. Di Martino will bring its heart to Harlem this year, supporting the project’s mission and ongoing community meal initiative, saving food from waste and providing nourishing meals to food insecure neighbors with hospitality and love. Also available this spring is Paccheri allo Scarpariello, named after the traditional Salerno Cobbler’s dish of Paccheri, a very wide tubular pasta, whole tomatoes from Corbara, Parmigiano and basil leaves.
The UNTOUCHABLES are Giuseppe’s favorite Neapolitan classics and are always available at A Tavola. The signature dish, La Devozione, is spaghetti al pomodoro made with only three ingredients, Lampadina tomatoes from the Sorrento Coast, garlic oil and basil. Linguine Alla Colatura Di Alici Di Cetara is linguine in an anchovy sauce named Colatura di Alici di Cetara, after a famous fisherman’s town on the Amalfi coast. The menu also features Penne Zitoni Lisce All’Arrabbiata a Roman dish known for its spicy tomato sauce with garlic, Calabrian chili peppers, and parsley.
For dessert, guests can enjoy the Pastamisu, a take on classic tiramisu with puffed pasta.
General manager/Wine Director Max Tierno (Eleven Madison Park) has curated a wine list focused on France and Italy. From classic producers in Champagne, Burgundy, and Piedmont to new, up-and-coming producers from developing wine regions like Campania, Calabria, and Sicily, there is something for every taste and price-point on the list to complement the cuisine.
Cocktail Bar: Cristhian Rodriguez (formerly of NoMad Hotel and Eleven Madison Park) created each facet of the bar program based on four principles: all drinks feature an Italian element, a New York element, a culinary element and a narrative element. His cocktails are intended to express and create memorable stories.
Highlights from the cocktail menu include Fantasma, Pisco, Cocchi Americano, Amaro Nepeta, Strawberry-Tomato, lemon, sparkling water, egg white; Figli Di Fiori, Malfy gin, elderflower tonic, lime, acqua di millefiori, edible flowers. The Bar Program also showcases several Zero ABV Cocktails like Commedia al Pomodoro, tomato water, basil, and blood orange soda.
Located at the store’s entrance is the pasta To-Go Counter which features three pastas for take-away La Devozione, Vermicelli Cacio E Pepe, and Massimo’s Pesto which, weather permitting, can be taken to their outdoor seating on 16th street or consumed in the market concourse.
Retail Store: features a multitude of brightly packaged portions of pasta in a one stop-shop boutique featuring more than 120 varieties of pastas and other branded items such as: Di Martino’s own accessories lines like branded Italian coffee moka pots and magnets, branded aprons and tins designed by Dolce & Gabbana, and the Barbie tin collection, as well as a selection of colorful, hand-painted ceramics and plateware from Vietri’s famed Solimene Ceramica.
